Chef Martin Kouprie and host Peter Geary manage this fine-dining stalwart with military precision. The space, with its elevated bar and grand dining area, suggests a particularly elegant cruise liner. Adhering to Ocean Wise’s sustainable seafood model, all aquatic dishes, like the wild B.C. spot prawns with coconut rice, grilled onions and a creamy crab bisque, are as delicious as they are ethical. On one visit, a slightly dry truffle-braised pork shoulder is outshone by the accompanying mushroom pearl barley, tender sautéed kale and apple cider gastrique. A pumpkin-spice layer cake with brown butter cream cheese frosting and salted caramel ice cream is nothing short of masterful.

Pangaea needs to do a serious homework on their party menu - we chose the most expensive one, and it was absolutely not impressive, moreover many dishes (rack of lamb, steak) were not done properly and were returned to the kitchen, sometimes twice...This is the worst experience I had... I won't go back there, and I don't think our guests will...
