As raw vegan cuisine becomes more trendy and the field more crowded, Live remains one of the best options. To start, a perfect plate of nachos brings crispy corn chips (made with a dehydrator, but they crunch as though they’ve been in a deep fryer), whipped cashews (as a clever, almost preferable stand-in for sour cream), a sprinkling of crushed walnuts (which are soft like grated cheese), salsa and creamy guacamole. It tastes amazing, and the best part is that there’s no grease. The beet burger is one of the best veggie patties in the city, mainly because it doesn’t try to taste like meat. Instead, the natural sweetness of the ground beet, formed into a thick disc with crushed walnut and sunflowers, shines, with tangy barbecue sauce, fresh mustard and crunchy, dehydrated onion slivers on top that provide a bit of crunch to the soft burger. The strawberry Nanaimo bar is a simple, sweet finish. Mains $12–$20.
