When Live opened at Av and Dav in 2002, it stood out because there were no other raw-vegan restaurants in the city. As the cuisine has become more trendy and the field more crowded, Live remains one of the best. Chef Sarah MacDonald uses the freshest organic produce and focuses on the fundamentals of good food—presentation, flavour and texture. To start, a perfect plate of nachos brings crispy corn chips (made with a dehydrator, but they crunch as though they’ve been in a deep fryer), whipped cashews (as a clever, almost preferable, stand-in for sour cream), a sprinkling of crushed walnuts (which are soft like grated cheese), salsa and creamy guacamole. It tastes amazing, and the best part is that there’s no grease. The beet burger is one of the best veggie burgers in the city, mainly because it doesn’t try to taste like meat. Instead, the natural sweetness of the ground beet, formed into a thick patty with sunflower-walnut butter, shines, with tangy barbecue sauce, fresh mustard and crunchy, dehydrated onion slivers on top that provide a bit of crunch to the soft burger. The strawberry Nanaimo bar is a simple, sweet finish. Amazing juices. Mains $12–$16.
