Former sous chef Adam Moon has taken over the kitchen at Starfish, offering a daily menu based around the market’s freshest and most sustainable catches. The oysters are impeccable: the selection includes rare varieties sourced from Ireland and Scotland, like Galway Bay and Loch Ryan. The bivalves could make a meal in themselves, but it's worth saving room for the rest of Moon's delicious seafood. Three perfectly grilled Portuguese sardines arrived stacked on a mound of tomato preserve with house-made sourdough croutons, fried capers and black olive powder. Moist white flakes of Lake Erie pickerel melt under impossibly crispy skin; it’s served served on a wonderfully savoury hash of confit potato, chorizo and green beans. Non-seafood dishes are just as tasty as the fish: silky Ontario duck breast is smoked in-house and tossed with watercress, frisée, sweet raisin chutney and a tangy maple-tamarind vinaigrette, while fork-tender Ontario lamb loin is dressed with toasted barley, bitter dandelion and a sweet potato purée that tastes like candy.
