Having helped define King West cool from the time it opened its original location back in 2003, the new Bay Street outpost of this modern Japanese “experience” hopes to bring a bit of hip to that buttoned-up corridor. The room resembles a boutique hotel lobby, from the electro soundtrack to the glass and wood screen that separates the bar from the dining area. Dashing servers tend to the upwardly mobile crowd with swift, choreographed precision. Colourful cocktails decorate most tables, but the real action is on the sake list, which goes beyond Japan to include selections from Oregon and California. The giant ebi shooter is described as a Japanese burrito stuffed with tiger shrimp, mango and avocado, and wrapped in soy paper. It may sound like a dare but is actually one of the best things on the menu. Pass on the bizarre smoked salmon makimono, seasoned with what tastes like powdered barbecue seasoning. Stick to the classics—carefully cut sashimi, a deep miso soup, shoyu-mirin-glazed grilled mushrooms—and you’ll leave happy. Mains $14–$35.
