It’s hard to think of more than two or three other Toronto-area restaurants in the same culinary league as the dining room at this elegant Federal Revival–style country hotel and spa; certainly none are quite as formal. Langdon Hall offers a grand dining experience: bolts of white linen shroud the tables, fleets of silverware grace every setting, and each wine varietal gets a dedicated crystal glass. Yet there is also a lightness to eating here: the unstuffy servers, the almost clairvoyant sommelier and the forward-looking menu that’s masterfully executed by chef Jonathan Gushue. His cooking combines fresh local ingredients (some of which come from the hotel’s own garden) with exotic ideas to superb effect. The kitchen’s braised, maple-glazed chicory, the unassuming side to a poached guinea hen breast, is a flavour revelation. The menu is expensive, though the seven-course tasting menus, at $125 each (or $220 with wine pairings), are terrific value. Mains $34–$49.
