Owner-chef Matteo Paonessa has built a charming home for his culinary vision: his chic salon is decked out in black, white and crimson, with enough tchotchkes to give the room a distinct personality. Paonessa’s monthly menu is deliberately challenging, but the exotic is never gratuitous. Pineapple cake soup is literally that: fingers of pineapple upside-down cake in a smooth pineapple and pink peppercorn foam. Its fruity tang is savoury enough that it works beautifully. Red deer meat is lean yet moist, served with a rabbit and sage ravioli, juicy kohlrabi and a wand of cinnamon-scented carrot; such flourishes take the cooking to a more sophisticated level.
