Chef Matteo Paonessa's wonderful little restaurant, tucked away in a Burlington strip mall, is packed with whimsy—a dressmaker's Judy dolled up in old clothes, vintage cartoons projected on the wall—and the ambitious food is just as fanciful. Paonessa is a master at layering complex, counterintuitive flavours—for example, he pairs a tender cube of braised veal tongue with handmade lobster ravioli, then douses the works with a fresh pickle-studded frozen yogurt to cut through the richness. Another take on surf and turf brings medallions of Cornish hen stuffed with confit leg, served with plump prawns and slices of pineapple and pink grapefruit. The flavours of the gamey bird, mild shellfish and sweet fruit go wonderfully together. For dessert, a fluffy rhubarb and vanilla bean soufflé pancake tastes like a dreamy cross between a waffle and a doughnut. Closed Sunday to Tuesday. Mains $36–$44.
