At one of Zen’s eight prized bar seats, the live dinner theatre of watching extremely skilled chefs at work is accompanied by an outstanding omakase. The smoke-kissed yaki ika (grilled squid) in a zippy fresh ginger-soy dressing is stunning: the cephalopod is butter soft. A handsome surimi and shredded carrot hat crowns a simple salad that’s topped by loose seaweed curls and milky blocks of tofu in a refreshing soy vinaigrette dressing. The fresh sashimi is impeccable: firm striped jack, crisp giant clam, and jaw-droppingly good cuttlefish (thick and creamy like a fine burrata). Wobbly tamago—a thick stack of sweet omelette pieces served chilled—finishes the meal nicely. Mains $14–$50.
