From the moment Yokohama-born Jyo Gao greets you at the door of his well-worn Newmarket room, his mission is to make sure you leave full (you will), and that he shares his passion for Japanese food. He will want to choose your food for you. If you order the beef teriyaki, he will scold you for not being adventuresome yet still serve a generous plate of sweetish rice and tender minced beef in an almost broth-like sauce. If you insist on other pop standards, such as the soft-shelled chicken gyoza dumplings, he will insist you try a piece of tataki—a lightly grilled, lightly peppered swatch of tuna—to whet your appetite for fish. Gao’s main-attraction omakase changes with the seasons. The o toro (tuna belly) salad is molten in texture and fiery in taste; the steamed egg is an ethereal, pudding-like dish of quivering egg and crab broth. Every slice of the sashimi is buttery and fresh. An extensive list of handsomely priced sakes is available. Mains $10–$45.
