At this cozy converted house in downtown Oakville, the five minimalist dining rooms are decorated with little more than glass display cases lined with ceramic, glass, stone and wooden sake cups. Although the menu is made up of teriyaki, tempura and generic sushi rolls, the customizable omakase menu, which needs to be ordered at least a day in advance, is the best bet. Braised octopus legs shine beside gossamer fillets of mildly sweet, lean bluefin and umami-rich toro. Green tea salt accompanies crisp, greaseless tempura smelt, okra and a meaty shiitake mushroom. Piping hot steamed sea bass wrapped around slippery green tea soba noodles in an incredible smoky smooth ginger sauce is more original than the ruffles of USDA prime-grade rib-eye steak that have been grilled with green onions and a saccharine yakiniku sauce. The mochi ice cream—a thimble of red bean ice cream enrobed in a chewy glutinous rice wrapper—is delicious. Forego the wines and choose from the decent selection of hot and cold sakes (the Horin Junmai Daiginjo is fruity and mild). Service verges on smothering. Mains $18.50–$48; omakase starts at $75.
