Seating no more than eight customers, Masaki Hashimoto’s restaurant is the next step in his ongoing plan to take refined kaiseki cuisine farther back toward its 500-yearold roots. The eight-course set menu ($300 plus tax, drinks and gratuities) culminates in a traditional tea ceremony conducted by Hashimoto’s son Kei, who also provides educational commentary and waits tables with extraordinary grace. Every component of the meal is treated with respect, its metaphorical significance as important as its provenance. The meticulous presentation encourages concentration—on the texture of pressed bora roe, the wild porgy sashimi and the crunchy tempura-battered kuruma shrimp. Reservations must be made one to two weeks in advance.
