The name translates as “country bumpkin,” but the place, with its plaid-shirted clientele and indie-rock soundtrack, is thoroughly urban. Craig Harding brings a forward-looking approach to Italian food while remaining true to the boot’s ideals of simple combinations and quality ingredients. Cocktails delight in both inventiveness and for the sheer quantity of booze: a couple of Genuine Articles (rum, maraschino, vermouth and absinthe) will leave you sweet-tongued and smashed. A marrow appetizer, surprisingly paired with oxtail and plum marmalade, is bone-licking good, while salty pecorino delightfully sharpens a salad of baby kale and roasted shallots. Entrées, like lamb shank, cooked sous-vide and finished on the grill, and a garlicky cassoulet, are outstanding. Mains $19–$42.
