Long the butt of jokes about rubber chicken, hotel restaurants in the city have raised their game in the past few years. The Hyatt Regency’s new subterranean restaurant is the latest entry into what is now a deliciously crowded field. The room can seem a bit cold at first, with its bright lighting, onyx bar and white-on-black decor, but the servers’ hospitality sets an inviting tone. An excellent version of the traditional Thai soup tom yum kung is authentically heady with the aroma of lemon grass and galangal. A deft hand with the spices and a slow braise have made the lamb korma complex and satisfying. Dessert is recommended. Mains $21–$30.
