At nearly six years old (which is like 82 in restaurant years) Cava, a stylish gem in an obscure corner of an urban strip mall, is now firmly established as part of the culinary firmament. Rather than settle into a predictable routine, however, the restaurant continues to innovate in ways that intrigue both chefs and regulars. Chefs Chris McDonald and Doug Penfold have created an adventurous and ever-evolving tapas-inspired menu that draws in influences from around the globe. A deeply savoury fennel gratin ingeniously combines piquant Spanish manchego cheese with almost tangy Asian fermented black garlic. Mexico meets France in a plate of thin crêpes stuffed with huitlacoche (a type of fungus commonly known as corn smut) in a spicy poblano crema. Elegant preparations like veal sweetbreads with a radicchio and poblano salad dressed with a subtle walnut vinaigrette are at home alongside more rustic home-style dishes like steamed clams with chorizo and bay leaves. While the menu may change and evolve it's comforting to know that the chipotle caramel popcorn will always be the first thing listed. Small plates $2.95–$30.
