The beer geeks at Bar Volo are so suds-obsessed they make Star Wars fanatics look reasonable. Owner Ralph Morana’s draft list is one of a kind, catering to IPA-loving hopheads and patriotic tipplers. The menu here has recently improved. The pizzas and pastas have been replaced by snack boards and gourmet sandwiches. Three dips outsourced from Mad Mexican (smooth, spicy black bean, rich guacamole, juicy pico de gallo) are all superb, but the tiny tortilla chips are too fragile for scooping. A bison burger is juicy and flavourful (despite being cooked medium-well) and layered with crisp pancetta, tangy buffalo cheese, sweet roasted peppers and soft bibb lettuce on a Rahier brioche bun. If you’re overwhelmed by the infinite beer list, try the Tu-Hop pale ale, one of Volo’s nano-brewed house beers. Mains $10–$14.
