A dramatically large pot of pink orchids pops against the muted, dark-grey colours of the Yorkville dining room. Tasteful restraint is also the order of the day for executive chef Jason Cox’s menu, a safe but artful representation of modern continental cuisine. Black cod paired with red chili squash and Swiss chard is luscious beneath a crisp skin, the lemon and shrimp reduction a refreshing change from the usual miso. Servers are knowledgeable and personable—many of them have clearly been serving for decades and know how to keep guests comfortable—and they nimbly shepherd diners through a world-class catalogue of wines, whether they can afford a premier cru bordeaux with a four-figure price tag, or just a quality tipple from the extensive range of $50 to $75 bottles.
