The snug, candlelit room is a romantic oasis in a neighbourhood where raucous resto-lounges have become the norm. In his first executive chef position, Nick Liu has been dazzling diners with a tight, constantly changing menu that shows a flair for layering flavours and balancing textures. Crunchy, succulent frogs’ legs are sauced with a gorgeous gribiche, piquant with grainy mustard and chunky with hard-boiled egg; a side salad of lily bulbs, peppery watercress and pickled honey mushrooms delivers an undercurrent of acidity that lights up the dish. Liu dials it down for an autumnal special of buttered, homemade pappardelle topped with nothing more than tangy pecorino fresco and a funky flurry of Croatian white truffles. Meaty mains include slow-roasted lamb shoulder served with soft squash gnocchi, and a yin-yang of goat cheese cream and rich, satiny jus. A dessert samosa oozes Soma’s Peruvian chocolate ganache with beguiling accoutrements that include mint, cardamom sugar, cranberry lassi sauce and slivers of fresh chili. Mains $22–$25.
