Luma stumbled when it opened in September 2010. The apps still need work—grilled octopus is tough and stringy, and a charcuterie board yields dry shaved tongue and grey, uninspired terrines. But the execution is far better on entrées. Rosy slices of lamb sirloin paired with panko-crusted sweetbreads are served on a bed of quinoa and sweet roasted roots that soak up the intense rosemary jus. Dessert offers some genuine razzle-dazzle, as in a sumptuous pâté of dark Valrhona chocolate, caramelized bananas, candied peanuts and a dreamy quenelle of peanut butter ice cream. The wine list may frustrate bargain hunters, but it’s a gold mine for patriotic tipplers. Service is friendly, efficient and unwaveringly confident. Mains $19–$36.
