The decor is passé, but the dishes are au courant. Sustainability is a priority, with local and even health-oriented dishes. On a recent evening, a starter of bison carpaccio with Thunder Oak gouda is right on trend and tastes great. The meat is lithe and cool, and the accompanying arugula salad is well seasoned. Likewise, generous rolls of smoked salmon are note-perfect with a tangy fennel salad. A huge short rib is dry and flavourless, and the matching glazed turnips and carrots are overcooked. Dessert continues the course downhill: the banana-custard cake is awful, and tastes more like the fridge than anything else, with bland almond praline ice cream and a dusty-tasting almond biscuit. Bumbling, amateurish service doesn’t help, but the wine list, with choices for all budgets and plenty of Canadian representatives, does. Mains $24–$44.
