Centro has never aimed for innovation. Instead, the mandate is to wow with pure, uncomplicated, perfectly executed continental standards and familiar ingredients. A simple salmon dish with capers and chopped egg is enhanced by the smokiness of the silky, fatty fish; a mound of thinly sliced bresaola with pear and almond is gilded with fragrant black truffle. Ridiculously tender chicken paillard is elevated by earthy shiitakes, wild rice and sweet marsala. A side of green beans is perfection—buttery, tender-crisp perfection. Handmade capellini is topped with a mouthwatering tomato-basil sauce, but the pasta is overcooked and lukewarm. Still, when everything else is so close to perfect, this odd failing can be forgiven, especially with a crystal tulip of sparkling Moscato d’Asti in hand. Flawless service. Mains $18–$47.
