Chinese expats flock to this Markham outpost for one thing: the authentic Beijing roast duck. As prospective diners salivate by the door, fleet-footed servers parade one spectacular nut-brown specimen after another through the restaurant. The skin is so crispy it’s brittle, and the meat is ridiculously silky, fatty and rich. It’s served in three courses: first with crêpes, scallion, cucumber and hoisin, then with lettuce (for wrapping), and finally as a flavourful soup. Other typical offerings on the long menu are also worth a try. Chung King serves a high calibre of Mandarin and Szechuan food. For instance, an order of amoy brings a pizza-sized pancake of oysters, egg and scallions that’s toasted at the edges, soft at the centre and doesn’t skimp on the so-fresh-they-still-wobble bivalves. Mains $9–$38.
