This Szechuan restaurant capitalizes on the intense heat of the cuisine. The spice of gongbao chicken is barely checked by peanuts, onions and green peppers—ingredients that appear on every plate. The double-pronged attack of the chilies and Szechuan peppercorns makes for a tastebud-numbing kamikaze dish. Shredded pork with so-called spicy sauce offers more balance. The acid tang of the pickled chilies equalizes the combined sweetness and spiciness. Pea shoots are treated similar respect. They keep both their colour and bite after a brief sauté, with enough garlic to give Dracula a headache but not kill him. A prudent touch with the cooking oil prevents dishes from becoming greasy. The drinks list consists of typical bottles of Chinese beer.
