This Szechuan restaurant turns the cuisine’s heat into a stimulant. The spice of gongbao chicken is barely checked by the peanuts, onions or green peppers—ingredients that invariably appear on every plate. The double-pronged attack of the chilies and Szechuan peppercorns makes for a kamikaze dish, numbing the taste buds. Shredded pork with “spicy sauce” offers more balance. Its chilies are pickled, and the tang of acidity equalizes the combined sweetness and spiciness. Pea shoots are similarly treated with respect. They keep both their colour and bite after a brief sautée, with enough garlic to give Dracula a headache but not kill him. A prudent touch with the cooking oil prevents dishes from becoming greasy.
