Chef J.P. Challet’s bistro, located at the lonely western end of Harbord Street’s restaurant row, has just about everything you’d want in a neighbourhood spot: the servers are charming and professional, the wine list is well curated and mostly affordable, the tiny space is intimate, and the cooking is both familiar and fabulous. Challet calls his style “cuisine nouveau classique,” and the name is apt. He does such bistro standards as boeuf bourguignon and magret de canard, but strips them down and re-imagines them; they’re modern, but without too much fuss. On one visit, blanquette de veau brings braised veal entrecôte that’s been pulled and stuffed inside a cannellono. Mains $25–$36.
