Chef Cory Vitiello is a master at layering big flavours and contrasting textures. The burger, served on the ubiquitous wooden cutting board, is arguably one of the city’s best: an explosively juicy disc of Ontario Harvest beef layered with sharp cheddar, crispy bacon and aïoli; a side of frites comes with a puddle of house-made ketchup perfumed with smoked paprika and cumin. The menu scores a hat trick with dessert, including the fluffy orange ricotta doughnuts that arrive alongside an espresso and caramel pot de crème. The libation list offers beautifully balanced cocktails and a tight selection of wines by the glass. The atmosphere is riotously fun, but it borders on anarchy during the height of service.
