Unless you come here with a map or GPS in hand, you will almost certainly think you’re going in completely the wrong direction; the restaurant is parked in an out-of-the-way industrial mall, next to a paper mill, and the interior reflects the scruffy exterior. The light is harsh, the ceilings are high, the decor could be described as warehouse shopping, and there’s a sign on the kitchen door warning employees that they’ll be thrown out if they don’t step in the disinfecting solution before they enter (the kitchen doubles as a meat-packing plant). The cooking is very good, particularly the dry, deliciously smoky pork ribs and big-flavoured pulled pork. The wings are a little fatty, and lacking smoke—they’re not at all bad, just not the best. The house sauce is made from vinegar, tomato, sugar, Worcestershire and a secret ingredient that can only be tamarind. Darryl Koster has developed a healthy heat-and-serve business in recent years; much of the menu is available boxed to go and frozen.
