Any true Torontonian has spent at least one debauched night at the Pilot. Named in honour of World War II’s heroic aviators, this venerable spot first landed on Yonge Street in 1944. In post-war Toronto, the bar was a favourite haunt of artists. Today’s Pilot (it’s been on Cumberland Street since 1972) looks much as it did long ago: a collection of clocks dresses the walls, the room is trimmed with cockpit-chic stainless steel, and whiskered men hunch over cold beers. On balmy summer nights, well-sauced crowds congregate on the casual rooftop patio, the Flight Deck (a reno has brought new retractable awnings and heaters for chillier weather). On Saturdays, less rowdy patrons come to chase away hangovers with live jazz. For a private party, book the second-floor Stealth Lounge.
