It’s easy to get full at Ka Chi before the appetizers even arrive—the tables are pre-emptively stocked with dishes of savoury kimchee, tangy pickled zucchini, sesame-scented bean sprouts and soft, buttery chunks of boiled potato. It’s worth saving room for the spicy, tender, char-grilled barbecue ribs, in a sweet, succulent marinade. Kam ta jang, a filling pork soup, delivers a rich, deep red broth simmered so long that the meat slides off the bones. The meal also includes moments of freshness: an inventive ramen dish tosses cold noodles with a hot pepper paste and crowns them with delicate slices of juicy apple and vinegary pickled radish.
