Distressed wood panelling and Edison bulbs date Bestellen’s dining room back to 2012, but the Francis Bacon–esque meat mural is timeless. At Rob Rossi’s restaurant, diners have come to expect meat on the walls, meat in the glass-encased aging room and meat on the plate—and that’s what the chef delivers. Entire roast suckling pigs are available for hungry parties of eight or more, a colossal côte de boeuf comes garnished with whole marrow bones, and the nightly butcher’s cut might include spoon-tender lamb shoulder infused with sweet smoke. More delicate dishes are treated with equal care. Oversized radishes are sliced wafer-thin to create ad hoc taco shells for pickled fennel and stracciatella fillings. A wild fennel salsa verde brings complexity to a bold steak tartare, and the ancho chili sauce that dresses the house chorizo verde has the near-bottomless depth of a good mole. Desserts change almost daily, but if the fryer-warm yeast doughnuts (filled with chocolate ganache) are on offer, leave room. The wine list favours deep pockets, while the velvet-gloved cocktails are heavy on trendy spirits like bourbon, amaro and pisco.

"The reviewer is totally right! The food is mostly good here (especially the brunch), but watch for all the little tricks they do to add to your cheque. The burger is decent, the fries are pretty good. The atmosphere is pretty cool, too, and Rossi is usually kicking around the kitchen and socializing, which is kinda cool to see. Not every chef in town does that. Whatever you do, order meat here. It's a meat place. There's meat everywhere, even in the interior design. This place is way better than the Black Skirt, which is next door. If you have to choose, choose here."
