Henry of Pelham Cuvée Catherin Rosé Brut

One of the few serious dry pink sparklers made in Ontario. Made from red (pinot noir) and white (chardonnay) grapes, it’s a very pale salmon colour, with a tight, brisk mousse. Some flinty sulphur on the nose drops the rating (more than one bottle was sampled), but there is faint dried cherry fruit, plus earthy, yeasty and garlicky complexity from bottle fermentation.
