Of all the big Aussie wineries, Penfolds is the most focused on making wines to age. Complex flavours include cherry, cedar, mint, tobacco and earth, but it’s all rather closed in. It’s mid-weight, firm, somewhat tart and tannic. The new vintage is reserved, perhaps needing a year or two to bloom. Best 2010 to 2013. LCBO 285544
