These fish and chips aren’t known for promoting coronary health, but they are so light and crisp that diners may think otherwise. Chunky chowder brims with halibut, celery, carrot, corn and potato. Among mains, choosing is easy: fish, chips or both. White halibut is dunked in a 58-year-old secret-recipe batter for golden deep-frying in beef drippings; box-cut fries, piled high, await a shake of salt and a generous sprinkling of face-puckering malt vinegar. Creamy coleslaw makes a surefire sidekick. Unlicensed.
