Under the brightest of lights, crowds of Thornhill workers and bubbes who lunch loudly devour classic Jewish comforts. Kishke, a gravy-covered sausage filled with matzo meal and beef fat, dissolves into soft bites of melting beefy mash. Smoked meat on rye, steamed until fork-tender and expertly hand-cut, remains the finest outside Montreal, its peppery curing enveloping the mouth in mustard-soaked glory. Save room for a flaky cheese bagel with a smear of sour cream.
