Open, airy and eclectic, Pangaea feels fresh despite its 13-year tenure in its sophisticated Yorkville digs. From tiny details (a bread basket with beet-infused butter) to the big picture (the kitchen follows Ocean Wise’s sustainable seafood recommendations), Pangaea is blessedly obsessed with perfection. Chef Martin Kouprie hits all the right notes with his seasonal menu; sommelier Jonathan Gonsenhauser lets diners’ taste guide his expert pairings. In mains, caribou is flavourful and tender. Flaky Arctic char sits on a pillowy potato-scallion pancake. Coconut cream pie showcases pastry chef Colen Quinn’s genius. Mains $20–$43.
