Paul and Sandy’s Real Barbecue $30 Gourmet [?]

Reviewed by Toronto LifeThe plush-toy pig peeking out at patrons from a ledge is a nice touch. So are the photos of the owners at Kansas rib joints—they’re effective shorthand for the increasingly familiar story of barbecue devotees who study from the masters in the Deep South, then return to share the fruits of their travels. This isn’t really a place you go for the ambience; you go for the flawless pulled pork, which gets both the smokiness and consistency just right: moist and a little bit chewy, without any gratuitous fat. Bonus: it also manages to avoid the saltiness that plagues many other versions around town. The beef brisket, though a little drier, is a close second. Sandwiches are your best bet; the crusty buns—though an affront to purists accustomed to the authentic Wonder bread used stateside—can hold a whole mountain of meat. Crumbly cornbread, with or without jalapeño, merits a side order if you have the appetite. Service is friendly, if a little harried at peak times when supplies tend to run low.
