Smoked salmon is Kristapsons’ specialty; in fact, it’s all they do. Andris Grinbergs and his team cure sides of farmed Pacific coho with sugar and salt, then cold-smoke them over hardwood for up to 24 hours, just as his predecessors have done in this modest Leslieville store since 1953. Grinbergs sells the salmon either hand-sliced or in whole sides, and supplies the likes of Holt Renfrew, Terroni and Harvest Wagon.
