Solferino sources the most flavourful fruit, the best natural purées (try Andean blackberry) and top-notch Belgian chocolate (Valhrona, Michel Cluizel, Callebaut). Pistachios and hazelnuts are peeled, roasted and ground in-house. Winter brings comforting flavours, with an emphasis on nuts and chocolate. In summer, sorbettos are fruitier alternatives; with no cream or milk added, they are virtually fat-free. Served in waffle cones, cups or tubs, the gelato comes in 24 flavours.
