In business since 1937, Daiter’s still has the same specialties: smoked fish and cream cheese, some of the latter flavoured with smoked salmon or pimento. Recipes go back centuries, says co-owner Stephen Daiter (who runs the business with his brother Joel), or else reflect modern preferences for low-fat and fat-free alternatives. The choice in fish is broad: smoked salmon, carp, trout and smoked chub, not to mention schmaltz herring in oil. Packaged foods from Israel are the gilt on the Hanukkah gelt.
