After working out of the kitchen at Célestin for four years, chocolatier Odile Chatelain has opened up a shop on a hopping stretch of Dundas West. The space is tiny; a Japanese screen separates the making from the selling. Starring 54 per cent Callebaut chocolate, square truffles are the specialty. Flavours range from the simple Moka (espresso) to the exotic Mexicana (tequila, candied lime peel and chipotle). Odile candies all of her fruits, including ginger, which is flown in from Hawaii once a year. Decadent brownies sell out fast.
