Everything is done on a grand scale here, starting with the superb blocks of chocolate (available in chips and five-and-a-half-pound bars) that are prized in top pastry and chocolate shops for their rich flavour and refined texture. There are 48 types on display: customer favourites include the Canadienne, a white chocolate truffle with subtle maple notes. Weddings and holidays bring in brisk special-order business.
