This tried-and-true local cheese chain now has eight outlets, meaning much of Toronto has full access to the world’s greatest cheeses. What excites owner Ektor Stroutzas most is the latest bounty from eastern Canada. From Quebec comes Kenogami, a washed-rind cow’s milk stinker with a buttery texture and a rich, toasted almond–like finish. La Belle Province’s famous Riopelle de l’Isle (that über-creamy, luxe cow’s milk triple-cream) is so popular Stroutzas can barely keep it in the warehouse. Each shop has its own personality, but all of them are staffed by knowledgeable folk who offer samples.
