Top-notch meat and down-home service are the winning formula here. There’s incredible variety in game meats and birds (ostrich, kangaroo and wild boar are just a start). Meats may be conventionally or naturally raised: Top Meadow Farms’ beef (aged at least three to four weeks) and Berkshire pork are examples of the latter. Fresh Quebec duck breast and foie gras are always in stock.
