After working out of a temporary portable building, the venerable butchery moved into a new space this summer, with owners Sam and Ben (former executive chef at Jacob’s Steakhouse) Gundy at the helm. There’s a bounty of choice: marinated, butterflied chickens; big bacon-wrapped kebabs; and house-made prepared meals. Foodies in the know relish Québécois treasures: double-smoked bacon and ham, whole chickens, tubs of duck fat. Beef is dry aged on site for almost 10 weeks. Equally tempting are the deli’s wares: jamon Ibérico, roast wagyu beef, wild boar bacon.
