Looking neat and spiffy in black and white—though less well stocked than when it opened a year ago—this temple of local and organic meat has a new owner. Linda Falagario, a 22-year veteran of the food biz, has plans to expand the butchery with gourmet grab-and-go foods for busy shoppers. For now, though, the focus remains on house-made sausages, marinated chicken—jerk, Louisiana, Thai—bacon so good even vegans have been known to cave to it, and dry-aged, grass-fed beef. Falagario will also custom-age your favourite cut up to seven weeks.
