Despite rising demand from stores and restaurants across the country (and in the U.S. and Bahamas), Ace doggedly adheres to its Old World techniques: dough is shaped by hand and baked in stone deck ovens. All of the breads here (there are more than 25 varieties) are free of preservatives and contain only natural starters; a yeast-free option, the Alpine rye, is also available. Along with traditional French baguettes, the mouth-watering lineup includes organic grains, ciabatta, olive fougasse and rosemary-flecked focaccia. They’ve expanded their repertoire to include a line of gourmet crackers and two decadent cookies. Ace’s headquarters feature a small café and store with house-made sandwiches, salads and preserves, as well as Dufflet desserts.
