Menus are carefully customized to reflect the chosen theme and personal taste, as well as any dietary and cultural restrictions. Sit-down meals may include foie gras poached in Chinese black vinegar and cured squab breast, followed by spiced Asian pear tarte tatin and preserved kumquat; or butter-poached lobster and soft poached-egg ravioli with crème fraîche and trout roe in a nori emulsion.
