Nix the notion that a picnic can’t be glamorous: at an outdoor après-ski luncheon, 30 guests sipped kumquat-spiked mulled wine around a table garnished with evergreens and icicles, and sat on ice sculpture chairs covered in woolly blankets and cushions; venison, brandy and fig stew cooked over an open fire nearby. Such is the attention to detail and creativity that has earned Shaw a first-rate reputation among the cocktail party set. Every event is custom, but one holiday party featured poached quail eggs with hollandaise and caviar, truffle quiche, bite-size lobster pot pie, and vanilla-poached crabapples dipped in chocolate.

- buffet dinner $40–$90 per person; minimum kitchen charge $400; plus wait staff and chef’s charges.
