Dinah Koo is a chef, cookbook author and former partner of Dinah’s Cupboard. Her latest venture, Wanda’s in the Kitchen With Dinah, a north Toronto shop that she co-owns with Wanda Beaver (of Wanda’s Pie in the Sky fame), is also HQ to Koo & Co., her long-time catering business. Imaginative, custom-designed menus, which emphasize fresh and seasonal ingredients and feature dishes from around the globe, often include wine pairing suggestions. Grazing dinners, which fall in between a cocktail and sit-down dinner party, are an increasingly popular way to entertain in small spaces; dishes might include cocktail quesadillas with Peking duck, or fresh fig stuffed with chèvre and wrapped in prosciutto with a balsamic honey drizzle. Dungeness crab cakes with Thai coconut sauce, and miniature lamb burgers on brioche buns are also options, followed by tapas of wild mushroom tartlets and sliced chicken roulades stuffed with spinach, sun-dried tomatoes and pine nuts. An Asian-themed food station with dumplings is one option for rounding out a meal; cap it off with fruit and sweets.
How much:
cocktails $35–$75 per person, sit-down dinner $65–$200; plus wait staff and chef’s charges
