Canapés, hors d’oeuvre, tapas. Whatever you call them, partners Lara Katz and Karen Rachlin have a skilful way with party nibblies. In fact, they’ve built their entire catering business around cocktail fare. With an emphasis on trendy foods—sweet-potato fries with black truffle aïoli dip in Chinese food takeout boxes; pistachio-crusted lamb lollipops; and savoury crispy cones with smoked salmon, crème fraîche and fresh herbs—the pair can make smaller versions of just about any food. Diminutive bites for in-home gatherings, weddings, corporate events, store openings and parties might include miniature Kobe burgers on home-baked buns, and sesame-encrusted seared yellow fin tuna with wasabi mayo on Chinese spoons, followed by individual caramel and chocolate-dipped cheesecake lollipops with crushed-peanut bottoms. The company will also put together take-home gifts for guests (including candy boxes and personalized cupcakes) and can arrange music, flowers, decoration and all event co-ordination.
How much:
$50–$75 per person, plus wait staff and chef’s charges.
