From a surprise birthday breakfast for two (think bite-size French toast, eggs Benny made with quail’s eggs, and a fluffy asparagus and brie omelette) to a corporate bash for 2,000, this crew takes on events of all sizes, though exclusive, intimate dinner parties and in-home cocktail affairs are a specialty. Service is top-notch and all menus can be customized. Most are inspired by Thomas Keller’s acclaimed French Laundry recipes, which showcase seasonal foods: a toro tuna sushi tasting plate with warmed sake; and warm rosemary-and-parmesan dropped scones with herbed goat cheese and beet root, and a red wine–redcurrant reduction were part of the Pride Toronto gala meal. Extravagant sweet tables are laden with zabaglione served over fresh berries, and marinated berries in pastry cream–filled chocolate cups.
