To the neighbourhood kids who pop by to taste her gingerbread cookies and houses, Linda Thomas is known as Grandma Cakes and Auntie Candy. Brides are equally glad to know her, thanks to her finely detailed floral cakes, which come decorated with pink freesias, pansies or whatever petals match the bridal bouquet. Clients are able to choose from a tempting variety of home-baked flavours (chocolate cake with double-chocolate buttercream is a favourite, as is mango filling with fresh mango pieces). Thomas also does lavish: the flowers for a seven-foot-high cake for a Post Road wedding took two weeks to prepare—the cake arrived bedecked with hundreds of sugar roses that matched the lace on the bride’s gown.
