When it comes to party cakes, say it with flowers: Ayoma Fonseka does the best iced buds in town. Brides looking for hyperreal hydrangeas visit her to order strawberry-chocolate cakes decorated with sugary blooms. With a steady hand and unwavering patience, Fonseka (the only Canadian selected to participate in last year’s New York Cake Walk, a very important cake display event) sculpts everything from calla lilies to roses—spending up to five hours on each flower. But she’s no one-trick pony: she also does themed cakes and has even rendered Toronto City Hall in edible form. For a girlie treat, the Think Pink cake is a five-tiered affair adorned with iced pearls, flowers and a velvety bow.
